RICOTTA
Our fresh cow’s milk ricotta is produced from whey, collected together and allowed to separate. It is available in various formats and sold in small baskets in the shape of a truncated cone. Ricotta forms the basis of many Sicilian recipes: pesto siciliano, crispelle, cannoli, cassate, cassatelle, etc.
